It’s only mid-June, we haven’t even officially hit summer yet, and I’m already thinking about campfires in the fall. There is nothing better than sitting around a campfire with friends, sharing stories and forgetting about the daily grind.
We took a walk around the lake at our local park last night in lieu of another workout video. It was nice to get outside and spend some time outdoors.
But it was sticky hot. And we kept getting buzzed by horseflies. And sometimes I would have to stop talking when we walked through a swarm of gnats to avoid getting a mouthful.
We circled through the campground and there were a group of friends relaxing around a fire. As I caught that lovely smell of a campfire, it was at that moment, in the midst of the bugs and the heat, that I was ready for a cool fall evening.
The most anticipated part of the first campfire of the fall season? Bringing out the marshmallows and chocolate and graham crackers for s’mores.
The unfortunate part is there is no graceful way to eat them. They are a crumbly mess, but they are so worth the sticky fingers and melted chocolate on your upper lip (that said friends will not tell you about but instead laugh to themselves).
But since fall campfires are still a long way off, we need a way to enjoy s’mores in the meantime. This s’mores brownie trifle is the answer. It’s the perfect summertime (okay anytime) replacement for campfire s’mores.
It’s super easy and so delicious. A great dessert to bring to your next summer potluck, or cut the recipe in half for a special weekend treat for your family.
Tip: no one will notice if a small amount of the ingredients never makes it into the trifle, but rather get placed in a bowl with a lid and shoved in the back of the refrigerator. Where let’s face it, no one is going to find it because they can barely find the items that are in plain site (tell me this happens at your house too).
And don’t feel even a little bit guilty when you enjoy the hidden indulgence during a quiet moment later that day. You’re a good mom and you deserve every.last.bite.
S'mores Brownie Trifle
- 9x13 pan of brownies (homemade or box mix)
- 8 oz. whipped topping
- 1/2 c. marshmallow creme
- 12 graham crackers
- 2 T. chocolate syrup
Slice cooled brownies into 1 inch squares (no need to be exact here). Make sure the brownies are completely cooled or they will melt the whipped topping and marshmallow creme.
Combine whipped topping and marshmallow creme with mixer on low until well combined. Crush half of the graham crackers and stir them into the marshmallow creme mixture.
Scatter half of brownie pieces into 3 qt. trifle dish and crumble 2 graham crackers over the top. Carefully spread half of the marshmallow creme mixture over the top. It's best to drop spoonfuls of the mixture all over the top and then gently spread with a spatula. Repeat to create second layer.
Crumble remaining 2 graham crackers over the top layer of marshmallow creme. Drizzle with chocolate syrup. Best served immediately but you can definitely cover and put in the refrigerator for a few hours.
