Quick and easy crispy chicken sandwiches are a perfect weeknight dinner. A few simple ingredients and less than 30 minutes is all it takes to get this family friendly recipe on the table.
Crispy chicken sandwiches are one of those foods that people seem to have a strong preference for what goes on them. Some strongly prefer the classic lettuce, tomato and mayo combination.
Some strongly prefer mayo and pickles. Others prefer their crispy chicken sandwich topped with cheese, although some would say that just ruins it.
While I would usually say anything topped with cheese is better, for some reason I don’t feel that way about crispy chicken sandwiches.
Don’t get me wrong, I wouldn’t turn one away if you put cheese on it. It would be difficult for me to ever turn down a crispy chicken sandwich. Or cheese.
But my top pick would definitely be one topped with mayo and pickles, hands down. Which camp are you in?
I have had a strong affinity for crispy chicken sandwiches for decades. Well not decades, I can’t be old enough to have a food I’ve liked for decades. Ok, yes, decades.
So when I didn’t want the cost or the calories of eating out, I wanted an option for making them at home.
For years I searched for a recipe for quick and easy crispy chicken sandwiches. I wanted something that was simple but still tasted pretty close to those I could get at a drive-thru restaurant.
However, I kept running into the same two issues: almost all called for breading a chicken breast half and most of them were deep fried in several inches of oil.
There was nothing wrong with those recipes, they just weren’t what I was looking for. Using a breaded chicken breast half just didn’t give them the texture I was after. And I hate to deep fry anything at home. Especially for what I wanted to be a quick weeknight meal.
Eventually I called off the search, there just didn’t seem to be a recipe for what I was after. I had given up the dream of finding a recipe for quick and easy crispy chicken sandwiches (my dreams are sad, I know).
So of course when I wasn’t even looking, that’s when I stumbled across it. A recipe that had just a few simple ingredients added to ground chicken, before being patted into shape and coated in breadcrumbs. The patties were then simply fried in the skillet with a small amount of oil.
It seemed just right, so I gave it a try. And they came out perfect the first time.
They were crispy on the outside, tender in the middle. Even better, they only took about 10 minutes to mix together before cooking them for a few minutes on each side in the skillet.
I actually think they closely rival or are even better than many of those drive-thru sandwiches that I was trying to copycat.
Quick and easy crispy chicken sandwiches at home. Perfection.
Quick and Easy Crispy Chicken Sandwiches
- 1 1/2 lbs. ground chicken
- 1 1/2 c. panko breadcrumbs, divided (I used whole wheat)
- 1 1/2 t. dried minced onion (or 3 T grated fresh)
- 1/4 c. milk
- 1 t. salt
- 1/2 t. pepper
Mix ground chicken, 1/2 c. of panko breadcrumbs, onion, milk, salt and pepper in a bowl. You can fold the ingredients together with a rubber spatula, but I find it works best to just used your hand to combine the ingredients.
Spread remaining 1 1/2 c. of panko breadcrumbs on a plate.
Measure out about 1/3 c. of the mixture for each patty. Shape into patties that are about 3/4 in. thick and coat with the panko breadcrumbs on the top, bottom and sides.
Heat about 1 T. oil in a 10 in. skillet over medium heat. Cook 4 patties at a time for 4-5 minutes on each side until cooked through. Repeat with remaining 4 patties.
Serve on buns with desired toppings.
